Ground Beef Enchiladas
Ground Beef Enchiladas recipe featuring Dakota Grass-Fed Organic Ground Beef

Ingredients
- 1 lb Dakota Grass-Fed Organic Ground Beef
- 1/2 cup White onion (diced)
- 1/4 cup Water
- 2 tbsps Taco seasoning
- 2 tbsps Hatch green chiles
- 6 Soft tortillas
- 2 cups Red enchilada sauce
- 16 ozs Colby jack cheese (shredded)
- Red onion, diced tomatoes, avocado, olives, sour cream, cilantro, fresh limes (optional toppings)
Preparation
- Preheat oven to 375 degrees F.
- Brown the ground beef and onion in a skillet over medium heat until the meat is no longer pink. Stir in diced white onions - season with taco seasoning.
- Spread about 1/2 cup of the enchilada sauce on the bottom of a 9x13" casserole dish.
- Add 1/3 cup of the ground beef mixture to the center of each tortilla. Add about 1/4 cup of the shredded cheese and roll up. Lay the seam side down in the casserole dish. Repeat until the casserole dish is filled with the rolled enchiladas. You can sprinkle over any remaining ground beef.
- Pour the remainder of the enchilada sauce over the tortillas. Top with cheese and bake for 25 minutes.
