Crockpot Sloppy Joes with Grass Fed Beef
Sweet, savory, cheesy and just a little spicy. These Crockpot Sloppy Joes feature Dakota Grass Fed Ground Beef simmered low and slow with peppers, onions and stout, then topped with melted cheese and homemade pickled jalapeños.

Ingredients
- 1 lb Dakota Grass-Fed Organic 85% Lean Ground Beef
- 2 cups White Onions (Diced)
- 2 cups Red Anaheim Peppers (Diced (Optional: Green Anaheim Peppers))
- 1/4 cup Garlic (Minced)
- 1 cup Tomato Sauce
- 1/2 cup Ketchup
- 1 cup Brown Sugar
- 2 tbsp Chili Powder
- 1/4 cup Worcestershire Sauce
- 1/4 cup Apple Cider VInegar
- 1/4 cup Yellow Mustard
- 1 Dark Beer (Bottle (Stout))
- Pickled Jalapenos
- 2 cups Water
- 2 cups White Vinegar
- 1/4 cup Sugar
- 1 tbsp Salt
- 4 cups Jalapenos (Sliced)
- 5 cloves Garlic (Smashed)
- 2 tbsps Mustard Seed
- 8 Brioche Buns
- 10 slices American Cheese (Or Cheddar)
Preparation
- Brown the ground beef on a medium high skillet.
- Drain the liquid, then add the onions and peppers and season with salt and pepper
- Continue cooking for another 5-7 minutes or until the peppers and onions soften
- Mix in the garlic and cook for 1-3 minutes or until the garlic becomes fragrant
- Transfer the meat mixture to a crock pot
- Add the tomato sauce, ketchup, brown sugar, chili powder, Worcestershire sauce, vinegar, mustard and beer and mix well
- Cook on high for 2 hours, or on low for 4 hours
- To make the pickled jalapeños :
- Combine the water, vinegar, sugar and salt in a saucepan or pot. Bring to a boil while mixing until the sugar and salt dissolve
- Add the jalapenos, garlic and mustard seeds to a heat proof jar and fill with the pickling liquid
- Let that sit for at least 30 minutes
- When the meat is done, remove the lid and mix well
- Add 5 slices of cheese on top of the meat and cover until the cheese melts
- Toast the buns and ladle a scoop of the sloppy joe on top
- Top with pickled jalapeños and enjoy.
